We are part of the project group "TauFrisch" and grow over three hundred different types of vegetables with mixed culture.
This ensures more flavor intensity, variety & freshness in our kitchen! The field at the Tauferer Boden is colorfully mixed: from classic varieties to old, local almost forgotten vegetables, we harvest them together by hand and then process them into delicious soups, dishes, side dishes and desserts. Our ecological garden is located in the middle of fields outside the village of Sand in Taufers. We do not use any kind of chemicals or pesticides. Instead, we work biomass into the soil to promote humus and build up microorganisms. This pure and natural cultivation method makes it possible to prepare all parts of the vegetables. So we use radish leaves for pesto, pea shoots and broccoli leaves for salads or roast kale leaves to make delicious chips. As you can see, natural and resource-saving cultivation promotes taste and increases vitamins and minerals. Nature can be so delicious!
