Want things to be hot, steamy and sensual for Valentine's Day? Nothing could be easier! All you need is a little dedication. We'll take care of the delicious rest. After all, our Herzerl ravioli taste as good as they look.
Recipe South Tyrolean heart ravioli
For 4 people
Dough:
50g wheat flour
50g durum wheat flour
1 egg
1/2 tsp olive oil
1 tsp tomato paste
1 pinch of salt
Knead all ingredients into a smooth firm dough, cover with cling film and leave to rest for 30 mins.
Filling:
200g aubergines
20g onion
50ml olive oil
20g parmesan
Garlic chopped parsley
salt and pepper
Peel the aubergines and cut into cubes. Finely chop the onion and garlic and sauté in olive oil.
Add the aubergine and sauté for 5 minutes. Then season with grated parmesan, parsley, salt and pepper and mix. Refrigerate.
Then roll out the pasta dough thinly, cut out heart shapes with a (biscuit) cutter. Cover each heart as a base with the filling, brush the edge with a little water, place a heart on top and press together well at the edge. Cook in salted water for 3-5 minutes, depending on the thickness.
Saffron foam:
100ml cream
50ml white wine
10g saffron
10g butter
Heat the butter in a small saucepan. Dissolve the saffron in the white wine in a small bowl and deglaze the butter with it. Pour in the cream and season with salt and pepper. Bring to the boil briefly and strain.
Arrange the cooked ravioli on plates and sprinkle some grated Parmesan on top. Whip up the saffron sauce with a blender and some cold butter and spoon over the ravioli, garnish with chives and crumbled shredded bread if desired.
